Holiday Cake: Sticky Toffee Pudding

I'll admit, the name of this dessert scared me the first time I made it. Sticky? Sure. Toffee? Yum! Pudding? Hold up...

Fortunately as we get older and more experienced, we do better. I eventually learned that a British pudding just means cake, dessert or a traditional dish.  Fifteen years ago, I pitted and sliced 10 lbs of dates at a San Francisco restaurant, and swore I'd never do that again. Plus I didn't even get to taste the Sticky Toffee Pudding (STP)! In a stroke a luck, a friend of mine made it for me a few years later in Philadelphia, and made me confront my ill-formed bias. It is now one of my favorite cakes, and has grown into a holiday tradition in our house. This year, my mother-in-law requested it for Thanksgiving! 

In years past, at Parker Hill Provisions we've focused on Bûche de Nöel during the holidays, but STP is a much simpler approach to a holiday cake. It is an irresistible combination of balanced sweetness and gratifying texture without all the fuss. Our base recipe combines medjool dates, dark roast coffee, and molasses, but each person can add a few personal touches if they'd like. It will be like your own episode of Great British Bakeoff! No baking disasters of course.

This class includes:

• Plenty of demonstration and hands-on instruction
• Take home at least 3 mini loaves (great for gift giving!) or one large format cake (6-9 inch round). For large format cakes, it might be easier to bring your own cake pan or serving dish. I'll reach out before class to confirm your size preference.
  
• Recipe packet with detailed amounts, instructions and tips
