Classic Tarts
A classic fresh fruit tart is a total showstopper, plus it is easy to make ahead of any celebration. In this class, we'll fill a shortbread-like crust with smooth pastry cream, and then top it with colorful fresh fruit. We'll demo a balanced dark chocolate tart with sea salt to make sure there is something for all taste preferences.
We will also learn to:
- Make pâte sucrée and line and blind bake in tart molds
- Make and infuse pastry cream with spices, herbs, or extracts
- Decorate with seasonal berries or other fruit and garnish with gold leaf
- Use specialized fluted tart molds and other basic pans you might already have at home
Participants will take home at least one whole 6-inch decorated fruit tart and a generous slice of chocolate tart.
